The bi-level bar and restaurant takes inspiration from the secret speakeasies and gentlemen’s clubs that thrived in early 19th century Europe and America. Executive chef Rene Michelena has crafted a hearty brasserie-style menu worthy of the awesome digs. Oyster shooters with champagne, tarragon and lavender oil and geoduck clam ceviche with a tangy kaffir lime, lemongrass and chilli mixture are stellar starters. But it gets better with the mains – the baked Cornish game hen with baba ghanouj and fatoush is a delicious ode to Middle Eastern flavours while the Iberico pork chop with smoked ribs is easily one of the best dishes we’ve had in a while. $1,000.
